Aside from the cooking method, it is actually very fine bread.

Ezekial 4:9 "Take wheat and barley, beans and lentils, millet and spelt; put them in a storage jar and use them to make bread for yourself.

Sprouting the grain changes the nutritional makeup drastically. Sprouts have Vitamin C. Unsprouted grain does not. As is yet another happy coincidence, it is a wise thing to do when your city is under siege.

Also, all of the sailors in history who got scurvy could have easily avoided it by sprouting their grain first.
