I'm not sure why Adobe Reader didn't offer you the chance to associate all PDF files with it when you installed it, but you can do that on your own.

Don't know why you'd want to, though. I must say that Preview is a MUCH faster application than Adobe Reader. It's amazing. I can open two hundred page PDF files in a couple of seconds on my paltry 500MHz PowerBook G4. Adobe Reader takes a lot longer just to load itself.
