Ten days ago I started back on a L-C diet. My approach is a combination of Atkins, Protein Power, South Beach and Hampton's diets, but I have to admit that I cheated big time last week.

When I am seriously low carbing, I try to have on hand some snacks (> 2g), i.e., shrimp, hard boiled eggs, boiled ham, cheese.

As of this morning I have lost 10-12 pounds. Over the weekend I surfed the internet looking for some L-C recipes to satisfy my sweet tooth. I bought several L-C candies, ice creams and popsicles but most have sugar alcohols or malitol. I was looking for something to provide some variety for dessert. One of my favorite desserts to keep on hand is either a raspberry or lemon mousse. I divide the mousse into serving-size portions and freeze them until needed.

Raspberry Mousse
1 quart heavy cream
1 packages S-F raspberry Jello
1/4 cup water

Add Jello to water and let sit for 5 minutes. Whip cream until it starts to thicken. Add the Jello/water mixture slowly so it does not lump, but not so slowly that the cream overbeats before all the Jello is added. Refrigerate until set (3-4 hours).

Lemon Mousse
1 quart heavy cream
1 T Knox gelatin
lemon juice, to taste
lemon rind
artificial sweetener, to taste

Add gelatin to 1/4 cup lemon juice or water and let sit for 5 minutes. Whip cream till it begins to thicken; slowly add lemon juice and sweetener to taste being careful not to overbeat the cream. Fold in lemon rind and refrigerate until set (3-4 hours). In a rush? This can be made without gelatin and served immediately.
