I think Americans don't eat mutton because we don't have to. My father-in-law said that in the army during WW2 they had to eat mutton once a week because they had to be "fair" to the sheep growers. Nobody liked it, it tasted like wet wool.

I do recall eating mutton once myself, a long time ago. Not at all as nice as lamb. Tough and stringy.

But if the grower slaughters the lamb before it grows up, then that's not a problem.

BTW, my father-in-law also said that in the army during WW2 they passed out cartons of every brand of cigarette, again, just to be "fair," and people used to trade for the popular ones like Marlboros and Lucky Strikes.

As for goat, you can get young goat here, cabrito, but I'd rather eat lamb, myself.
