The incubation time varies. In the 1918 pandemic there were reports of people playing bridge and dropping dead at the table. The virus can attack many organs simultaneously, leading to sudden drops in blood pressure and immediate death.

Same thing happens with birds. A flock looks fine in the morning and they are all dead by noon (with blood oozing from all orifices).

H5N1 can be quite nasty.
