Sidney, I think your best bet is the natural foods store in town. I know that organic eggs are usually fresher than supermarket eggs, for example. Make sure the ones you buy are from free range chickens that are fed a vegetarian diet and aren't treated with hormones or antibiotics (which aren't good for your health).
I am a little at a loss about salt substitutes. There is one called Also Salt--you can get it at alsosalt.com, I think. I am not sure there is any really good salt substitute, and if anyone knows of one, I would appreciate hearing about it myself. A lot of people think Also Salt is the best.
That cookbook I mentioned to Ionesco--150 Vegan Favorites--is something you might be interested in. It's at Amazon. It has lots of dishes with grains you can get at your health food store, protein sources like a variety of beans and chick peas, interesting vegetables besides mushrooms and tomatoes, and the recipes are all easy to cook in about 30 minutes. The cooking steps are a lot shorter and simpler than in Broccoli Forest. I think anyone would enjoy the recipes in it, really.
The health food store itself might have a cookbook section, and you could just look through it and see if there were any books there with recipes that you found appealing. At Amazon you can also get low salt cookbooks with good recipes. I don't know if you have access to a library, but they usually have good cooking and health sections.
You don't need to become a vegan to eat a healthier diet, or one you enjoy more. Of course, you could also go to a city once a month or so and stock up on the items you can only get there. Of course, I have no idea how many hours you are away from a city. |
