No, really, not a hunter at heart! My grandmother killed a chicken with a hatchet once, when I was a little girl. It really did run around her backyard with its head cut off, and I still remember it.

Even when I did eat meat I had to totally block out what the animal goes through--its horrible, short life and agonizing death, and then--murder on a plate!!! That's what you're eating whenever you eat meat. I would never have eaten meat if I had to kill it, and I think most Americans are the same.

Now I eat seitan instead of chicken--it's a meat substitute that the Buddhists invented thousands of years ago because they didn't want to hurt animals. I think it tastes really good, just like chicken, in fact. So I can make seitan marsala. In fact, I have a recipe for it . . . I'm sure Mr. Grainne would like some of that for dinner.
