Afghansitan under the Taliban is an example of the kind of "freedom" islamist groups like Al Qaeda want to bring about in the middle east. They do not want freedom for Arabs - they want an authoritarian state operating under their vision of what Islamic law means. Western ideas of freedom, especially in that westerners tend to believe in secular government, freedom of religion, equality for women, freedom of thought and expression, etc., are a threat to their vision if those ideas are allowed to flourish in the ME. That is what we mean by "they hate our freedom."

Of course, they also attack us because we do not want them to succeed in bringing about their vision for the ME - for a lot of very sound and ethical reasons, BTW - and refuse to abandon Israel to those who would wipe it out, but that latter point is way at the bottom of the list for the likes of Al Qaeda. They don't really give a damn about the Palestinians, but it makes for nice PR to say they're fighting for their "brothers."
