In my mind, avoiding real offense is not PC but a matter of politeness and sensitivity, which I don't think of as negatives.

You can't define "political Correctness". It has lost all its useful meaning. But, we all know what it is. Basically, the way it is used now, it is short hand for bigotry. People who are "against political correctness" for the most part (there are some innocents who have not got the word yet) want to be able to express bigoted remarks. They feel they have lost something they always had (eg the freedom to say demeaning things about women, minorities, and people who traditionally can't fight back).
