O R -- I have a feeezer full of perch & walleye in OH and a mix of striper, whiting, blue and redfish in SC. The perch is easy as it goes in a deepfryer with peanut oil. The other fillets are bigger and are either baked or go in a deep, huge skillet.
The 'french sweet potatos' are fantastic. They take less time in the fryer -- I'm told due to the high sugar content they will overcook -- Under unusal circs they go in the mikethen open them to fill with butter & brown sugar and top with tiny marshmellos- until they melt. I can make a diet special meal out of yams like that----
A small burg on the NC/SC border, Tabor City, has a Sweet Potato Festival every year (after Little River SC has the Blue Crab Festival) and I never miss either!
