Legumes are certainly a very old monoculture entry but as I said, the time frame of human culture is but an instant compared to the bigger evolutionary picture. Legumes in the human diet were occasional - now they are staples - all happening within biological instants.

Here is an article that furnishes more information on some suspected consequences of some lectin compounds. Don't run screaming from your next bean, but be aware that many people have trouble with beans (I do!) for good reasons.

I respectfully deny that dairy intrinsically harms cattle - but this doesn't mean I condone modern dairy practice. The Hindus were very conscientious about their cattle rearing and a friend of mine from Wisconsin has told me tales of dairy cattle so gentle and content that they would come up and lick you when you approached. Part of this is breeding - would you want angry cattle to milk? I wouldn't. But certainly these gentle giants have been afforded protection from predators while servicing man. This could be viewed as commensal and not strictly parasitic. This is changing, and has become more parasitic of late (within my lifetime), sadly:

So, at least anectdotally, the evidence is that cattle are not NECESSARILY harmed by dairy production any more than all horses are NECESSARILY harmed by being ridden. Again, it depends how such a thing is done. I will support your claim that we eat way too much dairy and I personally am using Soy Milk for breakfast on my multigrain (with Ancient Grains!) cereal. This other stuff is just something to consider when planning the next meal.
