You are very, very brave to eat tofu with a spoon. I like it disguised in fruit smoothies, and can tolerate it marinated in soy sauce and garlic in stir fries, but must admit I am not a huge fan.

If I am going to eat something off a spoon, it is more likely to be this:

Not too many people know this, but you can use one quarter cup of tofu, any style, beaten until smooth, as a substitute for eggs in brownies, cakes and cookies. I have had good baking luck with this substitution.

You are to be congratulated for making the huge and graceful leap to vegetarianism. You are saving a lot of animals' lives. I am no spring chicken either, well, no spring tofurkey drumstick I guess I would have to say. I was perfectly happy being a vegetarian myself, but then my husband suggested I read the articles at milksucks.com, and they were convincing, so we stopped drinking milk and switched to soy. I really like soy milk, especially the flavored ones, and soy milk works very well in cooking.

Eggs are still a real struggle. Sometimes I go to the natural foods store and just open a carton and touch one or two for old times' sake. I have actual fantasies about going out to breakfast and ordering eggs over easy, hash browns and toast, and sopping up the eggs with my toast . . . I should stop talking about this now, because I am getting too excited . . .

We have lots of interesting discussions about veganism and animal rights over here. Some of the posts are extremely philosophical and intellectual--there are so many people with huge brains writing at SI. It is really nice to read such interesting things. Please stop by anytime, and I will do the same at your thread. I am still hoping someone knows how to make a decent vegan pumpkin pie that is not runny!
