Every horse today has three toes, the main toe is what we call the hoof, the other two are laid into the cannon bone on each side of the leg, and sometimes pop out when stressed. These are called splint bones and harken back to an ancient three toed ancestor.

There is also a prehistoric horse in Europe called the Przewalski horse which is more or less an ice age era horse.

The Arab horse of today has mutated to have one less vertebrae than other breeds of horses.

The jungle cousin of the horse the Tapir is another example of evolution branching out and stopping for a few millions years.

The horse is actually the best and strongest case for evolution.
