My understanding is that aluminum - aluminium to some ;-) - pots are only a problem with acidic foods, especially if they remain in the pot cooking for an extended period of time. For example, one should not cook tomato sauce in an aluminum pan. The acidity apparently causes greater amounts of aluminum to leach into the food. Not a problem, BTW, with anodized aluminum - at least according to Calphalon. ;-)
