I have always loved butter. I refused to switch to margarine, even when I was little, because it tasted like crap. My bad cholesterol is super low, and my good is high- and my total is somewhere around 140. My heart rate is low, and my BP is low too. I LOVE things that taste good, but I like things really fresh- and I think one of the ways food can kill people, is when they go for high fat, but instead of going for quality, and something really fresh and tasty, with butter or cream, they go for quantity and quick- which usually means something with trans fats that doesn't even taste very good.

Our family is LOVING cooking with seitan- which Grainne recommended. It is delicious. I especially like it in curry sauce- but it is fabulous in any thick sauce, because it just soaks up all the yummy flavors.
