I'm beginning to have very grave concerns about corn. It is well known that fattening of hogs (used as animal models for humans) is done with corn. The grass proteins in corn are amongst the most recent assaults by agricultural monoculture on our immune systems.

We know that great apes aren't vegans. Despite the fact that they hunt monkeys and eat termites, their protein consumption is quite low and they eat almost no starch. Starch may be more important in determining obesity than any other single cause. A plain baked potato can run up your serum glucose more than a candy bar. Potatoes and corn are both New World foods without much evolutionary adjustment on the part of people. Americans eat a bunch of both.
