I made Swedish pancakes today. I got a mix from Trader Joes, which, oddly (imo) was made in Denmark. How can I trust the Danes to give me real Swedish pancakes? I wonder now if I've made the real thing. I fear I may really have made Danish pancakes. Be that as it may, they were tasty. I served them with fresh strawberries and whip cream, which as you know would make even sawdust taste pretty good. The pancakes, as I was directed to make them, were fairly flaccid- so for my serving, which I did NOT eat with strawberries and whip cream, because my kids ate it all while I was slaving over a semi hot stove, I kept flipping them in butter till they were brown and crispy. They were EXCELLENT- about the texture of a very thin potato pancake- they would have been very compatible with caviar, though I was out (I know, I know, it's hard to imagine anyone being out of caviar, but there you are.) I hope you won't think too badly of me. I DO have a whole duck in the freezer, and some foie gras somewhere, that someone gave us for Christmas, and I wonder if it's still ok? I should probably go find it. Hopefully it's not all furry.
