The left over part of the meatloaf I made, 2 potatoes in quarters in carrots....baked...Was good on Sunday. Then for last night I took the leftovers from that (had made enough for 4, but there are only 2 of us, plus CZ) so used the remainder for sorta a microwaved 'hash' last night. With the salad. Quite good, and very easy.....as well as pretty good in the calorie department too...The ground beef only had 9% fat, so wasn't at all greasy.
