why on earth can't pagans celebrate their festivities and get the same amount of time off, on dates that are authentic to them and go back to the beginning of time?

Because Christianity represents the dominant religion in the United States (and in Western Europe, I daresay), whereas individuals who actively practice paganism probably constitute a fraction of one percentage point of the population?
