This is what we did with our kids when they asked a few years back.

Christmas and Easter are times of great joy and blessings because of the reason the event is celebrated. You might not believe in the physical form, like Santa or the Easter Bunny and that's ok, because their only symbolisims. If you carry the joy, meaning and spirit of those days, it will reward you with material as well as spiritual happiness.

The Spirit of those two events is in all of us. We use the Easter Bunny and Santa in order to explain them to little kids.

That yonger kids part is what got my kids every time. They weren't little kids and therefore understood that some might still choose to believe while others don't openly sit on Santa's lap or do Easter egg hunts but will accept the material things given at the event.

Basically, you believe in Santa, you get presents but they might say Wal-Mart on 'em.
