I used to go with a sleeveless t-shirt over the jersey, but when friends gave me a hard time about the spandex/chamois I'd ask them:

"Would you prefer to have your groin sit in a pool of sweat for hours at a time while your thighs are chafing against the bicycle seat?"

Generally the response was:

"Say no more."
