I suppose grizzly bears are somewhat conspicuous out on the ice, so the seals see them coming and escape, leaving the grizzly starving to death. The albino version can sneak up [keeping eyes shut so the seal sees only a moving pile of snow].

After 10 generations, I suppose an instant polar bear is created. A few dunkings would probably be needed to eliminate grizzly genes which hesitate at a swim or don't do it well.

Wolves were bred into sausage dogs and poodles in a fairly short time, so making a white grizzly with water-tight fur should have been pretty easy.
