I've previously seen agents keep a listing off the MLS for a few days, but this appears to entail the majority of the homes for sale in the areas I've looked at.

Our MLS, like most, requires a home for sale be listing within three days after the start of the period of agency. The sole exception is when the seller makes a request in writing to the MLS to suppress their listing. In this event, once the home is sold, the listing and sale becomes public regardless of the preferences of the seller.

Some major change has occurred in the Los Angeles marketplace that I wasn't aware until yesterday. Obviously a change in policy by some of the largest brokerages.
