Ken, I have not fired up the Smoker yet.

So I rubbed em and poured water and beer in the bottom of a foil lined sheet pan .. covered with a foil tent .. not sealed. And ran em in a regular oven at 180 for about 8 hours. Then watered down the BBQ Sauce .. and Glazed em UnCovered .. about every 20 minutes for another 3 hours. When they quit absorbing the sauce .. and the Glaze got about 1/8" thick ... they were done.

I'm going to do a shoulder here soon.

I pulled the Rub from the MIM [ Memphis in May ] competition and combined the winner recipe from 2 years. So I have my own version of 2 different ones.

Crap .. Now I'm really hungry.
