Because, as we all know, in Arlington cemetery, some graves have crosses and some have Stars of David and some don't have either. This was what the families of the deceased chose.

The different markers are seen in all current National Military Cemeteries.

Unless things have changed...and I can check on that with the Honor Guard... the grave marker has to conform with the religion the service member last listed on his military record. That religion is also (or at least was) designated on dog tags.
