Noncontroversially speaking (I hope) I made a superb chicken soup today. I took the bones of my Rocky free range chicken (whole foods) and boiled them with the stems of a punnet of cress, and lots of onions, and then sieved the broth. Then I put in some chicken meat, some freshly chopped organic onions (yellow and green), some organic parsley (finely chopped) and organic carrots (baby carrots, sliced thin). About 5 minutes before serving I added half a bottle of a decent (but inexpensive) chardonnay to the soup, and ground some fresh pepper into it, and salted it.

There must have been about 10 cups. Lovely taste- we all agreed. Nice chardonnay flavor- and nice to drink the wine with the soup.
