Oh Yeah! I know what lox is. I also know what hard smoked, soft smoked, hot smoked and cold smoked are. My hubby owned 3 salmon processors in the 80s and brought home bunches of salmon every fall for smoking. Our smoke house was in the back 40 and looked just like an outhouse. Gosh I miss that smoked salmon.
