The refill kit I use has a 38 page instruction manual (actual book size is ~3x5). Each page is for a different cartridge model/style/manufacturer. It contains a picture of the cartridge, shows where the fill holes are located (holes hidden by the label which must be pin pricked to allow filling).
The ink is in a plastic squeeze bottle that has a capped hypo like tip which is inserted through the correct fill hole and then slowly squeezed to fill the ink holding wicking inside each ink well.
Some cartridges are more complex than the HP and the kit includes the required items for same ... such as small plugs, large plugs, eye screw, ball push tool, hand drill, BBs, inflator bulb, 1 pair plastic gloves (I don't bother with em) and cleaning solution but I just use Qtips and isopropyl.
Kit usable on many model cartridges from Canon, HP, Epson, Lexmark, Apple, Compaq, Sharp, Okidata, Xerox, and Brother. I am sure there are probably some models that prevent such use.
My 1210 black cartridge has one fill hole and the color has 3 (one for each color), other model/manufacturers may vary.

If you have an old discarded cartridge to experiment upon. Clean print head area with isopropyl wetted Qtips and dry with dry ones. This will not only prevent smearing on printed copy from excessive build up of old ink ... it will also lessen the transfer to your hands as you refill.
I also work on an area with about 10 layers of scrape paper so when the ink overflows the refill hole or oozes out nozzles, it doesn't make mess ... the ink can and will bleed through several layers so make sure you have enough.
Then locate the hole (s) located under the label on top of cartridge. You can press fingernail slightly on label on run lightly over label to find the fill hole depressions.
Black cartridge (56) refill hole is located approximately center of label; color (57) has one to center top of label (Magenta), one bout 2/3 down on left (Yellow) and one 2/3 down on right (Cyan). The photo Ink cartridge (I have never used one) has holes located same as 56 but the two photo inks are used and regular black refill replaces the yellow on the left hand hole.
All above is with label facing up and in normal reading position (vs upside down).
