Will you at least do as I suggested, and take a look at the configuration of the New Orleans lakefront, and the outfall canals? Also, take a look at how the lake system interfaces with the Gulf of Mexico? That USGS website I linked to you is very good, and goes into the complexities involved. It's solely due to the fact that the Mississippi wants to go through the Atchafalaya that I can't agree that removing the levees would affect the wetlands Southeast of New Orleans very much, if at all. The new alluvial deposition would be to the southwest of Lafayette. Morgan City would be the new New Orleans.
