Jarring would have been more descriptive.

The reason I asked was that I had never heard of "putting up" fish, regardless of the vessel. It already comes that way--in cans and now pouches. I've done a lot of serious fishing in my time around a lot of serious fishermen and what couldn't be eaten fresh got frozen. Or some people smoked it. But I never heard of canning or jarring it.
