The majority of the Chinese population regularly deals with live birds and dead waterfowl. You can go to any Chinese village and buy live chickens and dead ducks. It is very possible many in that population have been exposed to H5N1 in their genetic past and have developed some immunity.

We in the US will most likely not be so lucky. When was the last time you killed and gutted a chicken, or prepared duck from a carcass? It's been quite a few months for me ;)
