I don't think I've ever eaten caviar, and the thought of fish eggs makes me want to gag. However, I've eaten sturgeon and it was delicious.

For traditional caviar processing they killed the fish to harvest the eggs. According to Wikipedia they are now experimenting with surgical removal of the ovaries from farmed fish to extend the lifetime of the fish. That does seem rather cruel.
