Our paper carried that fascinating article on squirrel brains and Jacob-Creuzfeldt(sp?) disease, along with this little cooking tip. Some people just throw the whole squirrel head in the pot and simmer till it gets all mushy (oooh, delicious little frisson of disgust) and TAHT is what the non-elite eat.
