well, okay, but y'know, there are a few people on here that are working out and trying to lose weight, so i feel kind of guilty to post this.
We aren't much for sweet food, so this is a somewhat unusual treat for around here. i made it because i had a bunch of organic bananas that were getting too far gone for my morning Blackberry smoothie, and cuz there was some extra space in the oven next to the vegetable quiche that i was baking.

by the way, this is really just a variation on typical Banana Bread.. but, imho, much better due to the addition of cranberries. (i put cranberries in everything.. apple pies, lemon-cranberry muffins..etc...) This break makes a good trail snack food for winter hiking.

Banana-Cranberry Bread
1/2 cup butter or margarine (we only use butter here so i can't vouch for the results with margarine) 3/4 cup sugar 1 egg 1/4 cup milk 1 teas. baking powder 1 teas. baking soda 1/4 teas. salt 2 cups flour (could be all unbleached or a mixture of both unbleached and whole wheat). 3 or 4 bananas (mashed) 1 cup of fresh or frozen cranberries
Cream butter (or margarine) with sugar.
Add beaten egg, then milk.
Sift dry ingredients together. Add gradually to fluid mixture, beating after each addition.
Stir in bananas and cranberries last. If mixture is looking too dry, add a bit more milk.
Put in oiled loaf pan or casserole dish.
Bake about an hour at around 325 F. Use one of the higher racks on the oven or the bottom of the loaf may burn. Note: sometimes it takes a bit longer than an hour.
P.S.: Following eating a piece of this loaf, do an extra hour on the cross-trainer or treadmill next time you're at the gym, or walk or snowshoe an extra mile on a cold day.
