Hi-- I just updated manually like you did--

"To check for new definitions manually
Open Windows Defender. (Click Start, click Programs, and then click Windows Defender.)
Click the Down arrow next to Help, and then click About Windows Defender.
In the Windows Defender dialog box, click Check for Updates. "

Yes, it grays out as it updates, but did you notice that a Defender icon pops up in the System Tray as the update occurs ?
To close out the "gray" update box, just close the "about"
window, after the update finishes, and re-open it

All looks just fine to me-
