Those places have a lot of appeal. Fallbrook was becoming pretty pricey even when I was still there. Vista claims to have the best climate in the USA. Valley Center gets real hot in the summer, being too far from the ocean to get a lot of the natural air conditioning, but it's very nice too, with an old CA rural feel, orange groves, etc.
