I am zeroing in on the answer. The "eskimo fact" has been known to medical science since 1970. It was widely discussed by heart specialists in the mid eighties when niacin and clofibrate were the preferred anti hyper lipidemics. (Niacin is still probably the best of the bunch after all these years as it does not cause cancer and it raises HDL, something the statins such as lipitor do and "do not do", respectively).

What is in raw walrus meat and seal oil? (Why don't sharks and polar bears get cholesterol problems)? Excess magnesium, selenium and vitamin E, well known anti-oxidants and anti platelet-aggregation factors, may be the major part of it. Eskimos have 10 to 20 times the selenium, 5 times the Vitamin E and 4 times the magnesium in their blood. But there are 4000 bioflavonoids in the vitamin C group, perhaps 300 of which do effective duty. (Szent-Gyorgy earned the Nobel prize in 1928 proving bioflavonoids prevent scurvy, not vitamin C by itself.) And there are complex groups of enzymes. This takes some research to nail down. Eskimos do have one advantage. They have a gut enzyme for processing protein which we don't have. But we benefit from their diet too, by actual test. It involves not eating fish, which is not a staple of their diet, but eating the fat from sea mammals and the oil from seals, and eating it for the most part raw.

How to get the same effect by a diet we could eat, and supplements too? Well that will take time. For starters, eating most veggies and fruit raw, preserving the choline and lipase is one well known secret to reducing the caloric effect of food.

What is not known to many is the degree to which we are deficient in vitamins that we should not be short of. 25% of modern autopsies find NO serum vitamin E in the bodies of young men. Vitamin E is found in many foods. It is SUPPOSED to be a rare deficiency. It is not. Why should this be? The only answer is that there is something the diet that is killing vitamin E. Antibiotics, and insecticides are known to do this. Before we figure out what we should be doing to be therapeutic we should find out what are the causes of our ills.
