i assume the cost of lettuce is transportation and handling costs. no farm cost. years ago you bought it from the fruit stand, now you have a structure with airconditioning, lights, bells, prime land, etc etc to buy a head of lettuce. now if you are in la you can still buy it off the guy on the corner as you stop for at a traffic light. amazing how many stands pop up on vacant lots out there.
