A neighbor of 20 years did exactly that during the past boom. He got a loan worth way more than the real value, had a nice pension so he just packed up and left the state.

My understanding is if the foreclosure lawyer can't find you the court won't award a deficiency judgment, and even if they do you can always just rent in your new location. I have a friend who does attorney ad litum work for a foreclosure lawyer and he says they don't try very hard to find you cause it just creates extra paperwork.
