My New and Improved Tabloueh Salad

I've added perlini (tiny balls of mozzarella- YUM)

1/4 cup chopped fresh mint
1/2 cup chopped green onions
mix with 1/2 cup lemon juice and 1/4 cup olive oil (I use Meyer Lemon olive oil)

PREVIOUSLY prepare- 1 cup of orgnic cracked bulgar wheat (75 cents a pound at Whole Foods in the bulk food section), and cover with 4 cups boiling water- let sit for 2 hours. Wheat will be edible by that time- taste it. It should be light, and easy to chew- but not mushy. Drain wheat in colander, press out liquid. Stir in mint mixture above.

Add chopped tomatoes to taste (I use organic cherry tomatoes, about 1/2 pint), 1/2 cup parsley, perlini or chopped mozzarella (perlini are more fun), and salt and pepper to taste. Chill at least one hour, Enjoy
