You should get a dual-core chip - the big advantage is that if some program hogs the CPU the computer remains responsive. The AMD dual-core chips are prefaced by X2 and the underlying chips are not quite as fast as the best single-core AMD chips, but I view that as irrelevant for all but a very few specialized applications.

The X2 3800+ or above would be fine for virtually any application. (Top of line currently is X2 4800+ I believe). Personally rather than going with a top-of-the line CPU I'd spend the extra money on a fast drive (like the Barracuda) and making sure you have a decent amount of memory (1 GB minimum, with 2 GB a reasonable upgrade. (Make sure you get 2 x 1GB chips not 4 512MB chips if you go with the larger memory). Very few programs are CPU limited these days. I have twin Dell 2001 FP monitors attached to my computer and that works fantastically (I have one in landscape and one in portrait for PDF's and Word documents). If you want to do that, a video card with two DVI ports is nice. (DVI or digital outputs produce a crisper image than the older analog outputs.

P.S. Many of the AMD processors have or are dropping in price quite a bit - may make sense to wait a week or two to see if the computer prices fall with them.
