formica is the easiest. all you need is a trim router.

If you're handy with a router you can do corian solid surface easily.

Granite isn't that hard either but you need a circular saw with a diamond blade for straight cuts and a plastic router bit wth diamonds for the bull nose which costs about 200 dollars plus the router attachment.
