The Mac Mini Core Duo goes for $779 (in the education store), or $120 less. What you don't get is a the 17-inch display, Mighty Mouse, Apple Keyboard, or iSight, but missing are Bluetooth and Apple Remote. Not a bad deal for $120 price difference. Interesting system option to compare to the $999 MacBook if portability isn't an issue or liability.
