If I had been the professor who called you "dear" in class, there wouldn't have been any argument after class, I would have acknowledged it was a slip and a breach of professionalism.

Judges don't call lawyers "dear" in court and partners don't call associates "dear" at the office, at least not in public.

For many reasons, ranging from obvious favoritism to being patronizing, depending on motivation. Just not done.

Note that teaching class is a specialized role, in which the balance of power is quite uneven, and things like favoritism and being patronizing can be quite harmful.
