In science, there is no 'absolute proof' (that is only found in religion)... only the best currently available evidence. Everything is ALWAYS subject to being over-turned if and when superior evidence and better theory becomes available. But, I'd say that all the evidence supporting evolution is AT LEAST AS SOLID as the evidence supporting the theory of gravity (how the effect of gravity is caused, how it functions, etc.), if not EVEN MORE SOLID! (You appear to be making a common mistake: confusing how the words 'theory' and 'hypothesis' are used in science. When you say 'theory' you are mostly referring to what scientists call a HYPOTHESIS... i.e., a preliminary theory or thought experiment, with little evidence supporting it yet. While the word 'theory' is only used for a hypothesis that is WELL SUPPORTED by facts, has passed peer review and been repeatedly experimentally verified....)
