I don't think you raised it in a clumsy manner. Maybe it was I who expressed myself badly.

I don't think the differences are racial, they're cultural, so there's no special genetic disposition towards this or that, it's what they learned at home and in their own neighborhoods.

If you grew up cooking a certain way from your mama (or your daddy), and her mother and her sisters and the others in the family all cooked and you picked up things that way, you're going to have advantages over people who learn things from books.

I wouldn't ask Mario Batalli to cook Chinese and I wouldn't ask a white man from Montana to cook Creole.

That's just the odds. Any given individual can beat the odds, at least theoretically.
