Sounds very good. Big thing with vegies for me is flavor and mouth appeal. Cauliflower cooked to mashed potato's doesn't do it for me and this sounds perfect. I tend to do vegies at very high heat and very quickly so they are warmed through but still crisp.

Mr Smithee and I were talking fish on another thread, so we must fry some now so I can keep him from having dreadful stuff at local eateries:)

First though we need some hot pepper vinegar. This will make about 1 1/4 cup and is way more then we need for our catfish, but we will use the rest to make a wonderful salad dressing to use on a green salad or fish, chicken or potato salad.

1 cup water
6T white vinegar
1/4 t cayenne
1/8 t salt
4 jalapeno peppers quartered including seeds

2 quart saucepan combine the water vinegar and seasonings and bring to a boil over high heat. Add the peppers and remove from heat, cool and refrigerate covered overnight. Strain before using.

I need 2 T of this for our fish, use the rest as recommended before. Very good as long as you like lively. Check next post.
