I believe that the Apple philosophy was that for people who are new to computers (which include the vast majority of people up until recently) the one button mouse is easier to use - ever see a newbie doing something on the computer and getting frustrated because he/she keeps hitting the middle button.

I still see the confusion on a system where the buttons have different functions but left is used for most - although nowadays people get the concept faster

Other features were accessed by control - mouse click and option - mouse click. For quite a while (back to the OS 7 days?) you could buy a two or three button mouse from third parties and simply program the buttons to do option and control clicks.
