I have a big package of cleaned Canadian smelt in my freezer. I bought them on a whim a couple weeks ago. I remember as a kid my uncle (lived near the Columbia River) would ship a huge box of them to my folks. An aunt would cook them and we'd all get together for a feast.

I can't remember how she did that but I think they were just battered and fried. We also had some kind of red sauce we put on them at the table.

Any of that ring bells with you Alan? Hints on how to make the most of this would be welcome.
