Why does chocolate taste good and bitter herbs bad? Because our senses are wired in ways that set off pleasure or pain responses.

Actually those are things that can be explained naturally. Things that taste good to us taste like things that were good for our ancestors during the 100K+ years they were hunter/gatherers. For instance, we like sweets because the sweets available to our ancestors were mostly fruits and berries that were packed with nutrition goodness. In modern times, we've figured out how to make things sweeter without the accompanying nutritional values.

Things that taste bitter to us taste like things that were poisonous for our ancestors.

I don't see music as being different.

What survival benefit did musical appreciation provide for our ancestors? The lack of a good answer for that is the difference.
